Below is a recipe for some of the BEST mac-n-cheese I have ever had! It includes 4 different and surprising cheeses that work so harmoniously, you’ll be done with the entire pan in one sitting if you’re not careful! Give it a try and let me know what you think!
2 TBSP butter
2 garlic cloves, minced
1.5-2 cups milk
1 cup shredded parmesan cheese
1 (8oz) cream cheese
1 (8oz.) mascarpone cheese
4 oz. gorgonzola cheese
1 tsp salt
1 tsp ground white pepper
1/4 tsp ground nutmeg
16 oz. penne, cooked
breadcrumbs
On medium heat, melt butter in a dutch oven. Add garlic, saute until tender. Add milk, heat through. Gradually stir in 1/2 cup parmesan cheese and other cheeses and seasonings. Once all is melted together, add cooked pasta and toss. Place in lightly greased 13×9 baking dish.
Bake at 400 degrees for 7 minutes. Remove from oven and sprinkle with remaining 1/2 cup parmesan cheese and breadcrumbs.
Reduce oven to 350 degrees and bake for an additional 20 minutes. Enjoy!
