We Tried The TikTok Spaghetti Squash Trend And It’s a Smash Hit
The latest viral food trend taking over TikTok is a simple yet delicious recipe combining roasted spaghetti squash with creamy Boursin cheese. Home cooks and food influencers alike can’t get enough of this low-carb, veggie-packed dish that has racked up millions of views online. As someone trying to both eat a lower carb lifestyle and get my kids to eat more veggies, I had to try it.
To make the trendy recipe, you start by cutting a spaghetti squash in half lengthwise and scooping out the seeds. Drizzle the squash halves with olive oil, season with salt and pepper, and roast cut-side down on a baking sheet until tender, about 40-50 minutes. Once cooled slightly, use a fork to scrape out the spaghetti-like strands of squash.
The magic happens when you stir an entire 5.2 oz package of garlic & fine herbs Boursin cheese into the warm spaghetti squash strands. The heat from the squash melts the soft cheese into a luxuriously creamy sauce that coats each noodle-like strand. However, the craze has led to a surge in demand for Boursin cheese, with some grocery stores struggling to keep it in stock. Boursin’s sales spiked 92% in the weeks after the recipe first went viral in January compared to the previous year.
The beautiful flexibility of this recipe appeals to my creative side as well. Some chefs switch out the type of cheese, using feta instead and topping with a variety of proteins. You can also kick the spice levels up if you want to really get fancy, by adding chili powder, sliced jalapenos, or different flavors of the Boursin cheese.
