I’ve been on a zucchini kick lately and this is one of my favorite desserts to incorporate it in! It basically tastes like a light peanut butter brownie!

You can’t taste the zucchini at all! And you’ll see that even dessert can be somewhat healthy! This incredible recipe can also be found in True Roots, a cookbook by Kristin Cavallari.

Ingredients

  • 1 cup creamy almond butter
  • 1 egg
  • 1/2 cup coconut sugar
  • 1/2 tsp. pink Himalayan salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. pure vanilla extract
  • 1/2 cup dark chocolate chips
  • 1 large zucchini, grated

Prep

Preheat oven to 350. Line an 8″ x 8″ baking dish with parchment paper (or lightly grease with Pam).

The Process

In a large bowl, mix together the almond butter, egg, sugar, salt, baking soda, and vanilla until well combined. Fold in the chocolate chips and zucchini. Pour into the prepared baking dish and spread evenly.

Bake for 25- 30 minutes, or until golden brown and a toothpick comes out clean (I usually bake mine closer to 40-45 minutes). Let cool slightly before serving.
