What’s For Dinner? Sarah’s Turkey Zucchini Patties
It’s easy to hear a term like “Healthy Recipe” and think it will automatically be disgusting or bland. I promise these Turkey Zucchini patties are neither of those things!
I try my best to limit my red meat intake and stick mostly to lean meats like chicken, turkey, lean pork, and fish. If you are looking for something lighter than a hamburger, these turkey patties are for you!
I enjoy using Plainville Farms Organic Ground Turkey for this recipe. And boy would you believe that 1/2 teaspoon of cayenne pepper kicks this recipe up a notch!! Whoo! Enjoy the recipe below!
1 lb. lean ground turkey
1 large zucchini, grated
2 onions, minced
1 whole egg
1 clove garlic, minced
1/2 Tbsp. fresh rosemary, chopped
1 tsp. pink Himalayan salt
1/2 tsp. ground black pepper
1/2 tsp. cayenne pepper
Combine all the ingredients in a bowl (fun to mix together with your hands!). When well combined, shape the mixture into patties. In a large frying pan over medium-high heat, heat 1 Tablespoon of olive oil or coconut oil. Cook the patties until golden brown, about 6-7 minutes per side (I like mine just a little charred!)
I usually enjoy my turkey patties with a side of steamed broccoli and brown rice or potato!
(This baked potato ended up being the size of my face…..HA!)
